Cookies for Breakfast

Pumpkin Pancakes with Cinnamon Butter
{MP 15th Ward Relief Society Cookbook}
Made these for Halloween morning and was basically like eating pumpkin chocolate chip cookies for breakfast. What's wrong with that though?? Exactly.

2 cups flour
5 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp each: all spice, cinnamon, ginger, and nutmeg
1 ½ cups milk
1 cup pumpkin puree
2 eggs
2 Tbsp veg. oil
2 Tbsp vinegar (I was scared of this part, so I omitted it)
½ cup nuts, optional*

Mix wet ingredients. In a separate bowl, combine the dry. Now incorporate the wet with the dry just until combined. Heat a lightly greased griddle over medium heat and make your pancakes! * I added chocolate chips instead and my oh my it was dee-lish. Basically tasted like a normal chocolate chip pumpkin cookie for breakfast, but what’s wrong with that??

Cinnamon Butter:

½ cup butter (1 stick)
1/3 cup powdered sugar
1 tsp ground cinnamon
A touch of orange peel

Mix all together and spread over warm pancakes!
