oh dear dear dear

Banana-Coconut-Nut Bread
{Martha Stewart Baking Handbook}


3 cups all-purpose flour
1 tsp baking soda
3/4 tsp salt
3 large eggs
2 cups sugar
1 1/3 cup veg. oil
2 Tbsp pure vanilla extract
1 1/2 cups ripe mashed banana
1 cup unsweetened shredded coconut
1 cup walnuts, finely chopped
1/2 cup buttermilk (or 1/2 cup milk with 1 tbsp lemon juice mixed in)

Preheat oven to 350. Mix the flour, baking soda and salt together. Set aside. In a separate bowl, combine the sugar, eggs and oil- mix on medium low speed until just combined. Beat in the flour mixture and then fold in the smushed banana's, coconut, walnuts, and buttermilk. Just DON'T over beat.

Pour into two regular sized loaf pans and bake for an hour, rotating halfway through.

Oh, don't forget to grease the pans either before batter goes in.
