Mike's Famous Brownies
{Liz H.}
Not sure who Mike is, but last night we were over at some friends for dinner and these evil brownies were served irresistably with mint-chocolate chip ice cream oozing all over 'em. Evil I tell you. They are so scrumptious and chocolatey and exactly how I want my brownies to taste. Thanks, Liz!
1 cup butter, room temperature
2 cups sugar
4 eggs
1/2 cup + 3 tbsp cocoa
1 tsp salt
2 tsp vanilla extract
1 3/4 cups all-purpose flour
1/2 tsp baking powder
1-1 1/2 cups dark chocolate chips, or shaved chocolate
Mix the butter with sugar on medium high speed until creamy. Add eggs, one at a time until the mixture is pale yellow. Add the vanilla extract. Stir in the cocoa. Sift the flour and baking powder together and add in, mixing just until combined. Stir in chocolate and bake at 350 D's for 22-25 minutes. (Remember, once you can start smelling something, that most likely means it's done or close to being done).
