Healthy Turkey Stroganoff
Easy, quick, and good for your little body! We just made this tonight in time for Chris to leave for Priesthood meeting.
1 lb lean ground turkey
2 Tbsp olive oil
1 envelope, McCormick's Stroganoff mix
1 cup water
1 cup lite sour cream
1/2 cup chopped fresh Italian parsley
1 small onion, chopped
1 cup mushrooms, sliced thin
1/2 lb whole-wheat egg noodles, cooked al dente
Oil a large saucepan over medium high heat. Add turkey, onion, and mushrooms. Break up the meat, and cook until no longer pink. Drain in colander over running water. Return meat/onion/mushroom mixture to pan and turn up heat. Add water, McCormick's mix and bring to a boil. Cover and turn down heat to a gentle simmer, for about 10 minutes. Take off heat and stir in sour cream and parsley. Add salt and pepper if needed. Spoon over whole wheat noodles.
On the side I served blanched green beans and steamed carrots, both mixed with butter, lemon juice and seasonings. Yum!
