White Chocolate LB {pound} Cake/Cupcakes
{ Inspired by "The Cake Doctor"}
6 oz white chocolate, melted in double broiler, cooled slightly
1 plain white cake mix
1 stick butter, melted
3 eggs
1 tsp pure vanilla extract
Mix white cake mix, butter, eggs, and extract together. Add slightly cooled, melted white chocolate. Pour batter into cupcake or cake molds. Bake at 350 for 25-35 minutes (check by 20-25 minutes) until done. Frost with favorite icing/frosting*.
*I made cupcakes, frosted with a basic buttercream frosting and topped with shaved coconut. Another good option for these cupcakes is to mound fresh whipped cream atop each cupcake, with sliced strawberries. I know- Yummy!!!
