Chicken in Tri-Mustard Marinade
Serves 2-3
This was din din tonight. I find it a good sign when the first sound out of the person's mouth eating it is, "yummmm". Hence, if my husband likes it in the first bite, me thinks it's worth posting. Please don't even think about using the yellow/"hamburger" mustard- that will ruin this! Otherwise, enjoy.



2 lbs boneless, skinless chicken breasts
1/4 cup Dijon mustard
1/4 cup hot mustard
1/4 cup whole grain mustard
1/4 cup oil
1/4 white wine vinegar
1/2 cup apple juice
1 shallot, minced
Salt and pepper
Fresh thyme

In a large bowl, mix mustards, oil, vinegar, apple juice, and shallot together. Season as needed. Add chicken and marinate in a glass casserole dish for 4-6 hours. Preheat oven to 350 and bake until chicken is no longer pink, anywhere between 20-30 minutes. Garnish with fresh thyme and serve over rice.
