Pasta Salad with Chicken, Almonds, and Raisins

8 ounces whole wheat penne or rigate
2 1/2 cups shredded chicken
1 cup plain, low-fat yogurt
1/2 cup golden raisins
1/2 cup chopped fresh parsely
2 Tbsp toasted almonds, chopped
1 tsp finely grated lemon zest, plus 2 Tbsp fresh lemon juice
salt and pepper

In a large pot of boiling salted water, cook pasta until al dente. Reserve 1/4 cup pasta water and drain the pasta. Rinse under cold water to stop cooking process.

In a nice-sized bowl, stir together pasta, chicken, yogurt, raisins, parsley, almonds, and lemon zest and lemon juice. Thin sauce with the reserved pasta water if needed, season with salt and pepper, and enjoy.
