MeatBALL!!!


I just love a good meatball.

I've been well trained actually: for our birthday dinners growing up, I think more often than not, meatballs were my chosen birthday meal, hence, there are years worth of meatballs in my tummy.

This wonderful recipe can be found in cookbook, Secrets of a Skinny Chef, and yowsers, let me tell you what: they are a real showcase meatball. Not only are they healthy, or whatever, BUT, so much flavor packs into 'em you'll be shocked. Amazing again, what some garlic, fresh herbs, and proper seasoning can do.

The recipe I followed is designed for a meatball-marinara sandwich, which is of course, a winner dinner, but we ate these as leftovers the following night without any sort of fancy-pants marinara or melted cheese, and they were just exceptionally tasty on their own.

Hate to be biased, but this qualifies as a new favorite meatball recipe. Hope you'll give these a shot; really, you'll be happy you did.

Healthy Turkey Meatballs
{adapted from Secrets of a Skinny Chef}

1 lb lean ground turkey
1 small zucchini, grated
1 large carrot, grated
1 cup bread crumbs
1/2 cup fat-free milk
1/4 cup Parm. cheese, grated
1 egg
1/4 cup fresh Italian parsley, chopped
2 garlic cloves, minced
1/4 tsp salt
1/4 tsp black pepper
Cooking spray

Place all the ingredients in a small bowl and combine together with fingers until smooth. Using a mini ice-cream scooper, form into roughly 16 balls and place on a greased cookie sheet (or you may skip the greasing portion and place them on parchment paper).

Bake at 350 for about 20 minutes or until they are just done. Serve on baguettes with favorite marinara sauce and melted mozzarella, OR eat plain with a side dish or rice, or whatever.
