Frozen Strawberry Squares-Revisited




An all-time favorite dessert, from my Grandmother to me to you.

It encompasses summer in one bite: you get chunks of strawberries, frozen whipped cream, and a tangy zang of subtle lemon juice AND it tastes darn good after a BBQ meal or any Mexican fare.


Just a tip for your eaters: I would put the strawberries in a blender and let it give them a nice chop until they are relatively diced up... I've had this where I allowed the strawberries to be whole and you spend your entire dessert time gnawing like a mad man on these huge frozen berries and frankly it takes the fun away from it. So, keep the strawberry pieces small and thank me later.


Anyways.. easy and simple but delicious. My kinda style.


Frozen Strawberry Squares


1 cup flour

¼ cup brown sugar

1 square butter, melted

½ cup chopped nuts, raw pecans are exquisite


Mix the above ingredients all together on cookie sheet- bake at 350 degrees for 20 minutes or until light brown.


2 egg whites

2 Tbsp lemon juice

1 carton frozen strawberries (2 cups approx..) chopped, and somewhat thawed

1 cup sugar

1 cup whipped cream



Whisk egg whites until peaks form and fold in remaining ingredients except for whipped cream. Gently add the whipped cream now and set this mixture aside. Sprinkle a glass baking dish (9 x 9) with 2/3 of already made crust and then spread strawberry whipped filling over crumbs. Sprinkle remaining crust on top of strawberry mixture and then freeze until ready to serve. Ya may wanna let it thaw a few minutes before you attempt cutting it... not worth breaking an arm or knife on.
