Another Cookie. Surprise Surprise.

Apricot-Coconut Cookies
{Taste of Home Baking Book}
Yields ~ 2 dozen
To my delight, the hubby loved these little treats. I wasn't personally wowed by them, in my snobbish cookie taste, but he ranked these in his top-three favorite cookie category. Hence, I thought it was worth posting.


1 1/4 cups all purpose flour
1/4 cup sugar
1 1/2 tsp baking powder
1/2 cup cold butter
3 ounces cream cheese
1/2 cup shredded coconut
1/2 cup apricot jam

In a large bowl, combine the flour, sugar, and baking powder. Cut in the butter and cream cheese until mixture resembles coarse crumbs. Add coconut and preserves, mix well.

Drop by spoonfuls onto greased baking sheet. Bake at 350 d's for 10-12 minutes or until lightly golden brown. Remove to wires and allow to cool completely.

Make glaze, and frost cooled cookies.

Glaze:
1/2 cup powdered sugar
2 Tbsp apricot jam
1 1/2 tsp softened butter
1 1/2 tsp milk

Mix all ingredients together well.

Oooooh Kate! I am loving the sight of these! What a CUTE platter too! These look like spring during a snow storm (which is what we in the Rockies keep experiencing! Lecker!
