Delightful Bread

Strawberry Bread

{"Always In Season"-Utah Jr League Cookbook}
Makes 2 scrumptious loaves
Strawberries are going to be making their grand entrance again into season within the next few months and I can't hardly wait. Here's one of my favorite recipes using the pretty fruit.


3 cups flour (wheat flour also works)

2 cups sugar

1 tsp baking soda

½ tsp cinnamon

4 eggs

1 ¼ cups vegetable oil

2 cups fresh sliced strawberries

Mix the flour, sugar, baking soda, cinnamon and salt in a large bowl. Add eggs, oil, strawberries, and mix until just moistened. Spoon into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour and 10 minutes. Cool in pans for several minutes; remove to wire racks to cool completely.
