Last Minute Life Savers


Grandma W.'s Shortbread
Serves 20

These are super plain, but how can butter, sugar and flour combined be bad? In the words of Ina Garten, if you ever watch her, and if you don't you should because she's the bomb, "How bad can THAT be?" ha ha... Nothing like eating a little delicate flakey cookie to top a meal off. We made these last night and cut them into squares, enjoying them for the week. These are especially handy to make if you've run out of eggs.


5 cups flour
1 cup sugar
1 lb butter, room temperature (that's 4 squares, folks)

Preheat the oven to 350 degree's. Combine the sugar and butter, mixing until creamy. Add the flour and with your mighty beautiful hands, mush up until everything is just amalgamated. At this point, you may either chill the dough for an hour or so, or put into a 9 x 13-inch glass pan, pressing the dough to a 1/4" thick. Bake until lightly brown (25 minutes or so), remove from oven, prick all over with fork, and cut into squares or diagonals.
