BBQ Chicken and Brie Quesadillas


Have mercy, these are really superb! And I'll tell you what- if you ever had any reservations about combining the delicately mild Brie with BBQ sauce, well, this will do those away!

Brie anything though... seriously, when have you ever not liked Brie with whatever else you were snarfing?

But if you happen to be an unfortunate Brie antagonist, extra- sharp white cheddar cheese pairs well too with this recipe, as we discovered with my husband's quesadilla.

The recipe again, comes from Keeping Up Cookbook in their appetizer section. I do not have the book right in front of me at the moment, but we changed our method up just slightly, so here is how it worked in our kitchen.

It is really quite delicious. Can't wait to do more of these!



BBQ Chicken Brie Quesadillas
{Adapted from Keeping Up Cookbook}


1 lb chicken
1/2 bottle of your favorite BBQ sauce (Wegman's has their own, awesome brown sugar BBQ sauce if you have a Weggie's near by)
Scallions, white and green parts, thinly sliced
1 mango, thinly sliced
3 ounces Brie cheese, thinly sliced
Fresh cilantro, chopped
Favorite flour tortillas

Cook chicken in a crock pot on low until completely cooked through. Shred into small pieces, add BBQ sauce, and return to crock pot until ready to use.

In a large skillet greased with some PAM, place on tortilla and then top with bbq chicken, mango, scallions, cilantro, and Brie. Place another tortilla on top and cover with the skillet lid.

Cook on medium heat and flip halfway through so that the other tortilla gets crispy as well.
Cook until golden brown and cheese is melted.
