Quick "Fried" Ice Cream


Ah yes. Another recipe from my new cookbook and another fantastically addicting one at that to add to the collection.

Faux fried ice cream. Faux or not, I swoon over anything ice cream related.

You will really love this. We served it with some quick homemade fudge sauce and fresh raspberries. Frankly though, you may just wanna skip past that fancy pants stuff and pop them in your mouth at every convenience.



Faux Fried Ice Cream
Keeping Up Cookbook

1 cup sliced almonds
2 Tbsp butter
dash of salt

1 cup brown sugar
1 1/2 cups shredded, sweetened coconut
2 1/2 cups Rice Chex cereal, crushed
1/2 cup butter, melted

1/2 gallon favorite vanilla bean ice cream

Saute almonds in butter and salt over medium heat until lightly browned. Cool on paper towels. Stir together brown sugar, coconut, crushed cereal, melted butter, and cooled almonds.

Let ice cream soften just slightly. Line a baking sheet with wax or parchment paper. Form ice cream balls with a scoop and roll in mixture until well coated. Place on baking sheet and return to freezer. Cover with plastic wrap and keep frozen (these can be prepared several hours in advance and last for a few days).
